The Spicey Shrimp Salad Everyone Will Be Talking About At Your Summer BBQ

 

So this salad, is just not for your bbq’s this summer, but when the burgers and dogs are flying off the grill and you are looking for a healthier option, this is a fabulous option!   It has become a staple in my house, and is an easy and refreshing clean meal.  I had been making 2 different recipes similar to this, and created this one for Clean Cut!  It is seriously refreshing with a little kick!  Let us know how you like it.  Feel free to comment below.

Clean Cut Spicy Shrimp and Bean Salad

  • 1/4 cup cider vinegar
  • ​​3 tablespoons olive oil
  • 1 tbsp fresh squeezed lime juice
  • 1 tbsp chipotle peppers in adobo sauce
  • 1 teaspoon ground cumin
  • 1 pound cooked shrimp
  • 1 15-ounce can organic black beans, rinsed
  • 1 cup chopped grape tomatoes (or similar)
  • 1 large chopped poblano pepper
  • 1/2 cup chopped green onion
  • ​1 C cooked shelled edamame
  • 1 tbsp chopped garlic
  • 1/4 cup chopped fresh cilantro

Whisk up the vinegar, oil,  lime juice, chipotle, cumin an in a large bowl. Mix in the shrimp, beans, tomatoes, poblano, green onions, edamame, garlic and cilantro.   Mix up to coat.  Let sit for an hour to marinate.   You can also add some avocado to this (not in the nutritional calories with this specific recipe).

 

This recipe makes 4 servings at about 330 calories per serving.
