Asian Style Sesame Chicken with Roasted String Beans and Cherry Tomato
For The Chicken:
2 shallots chopped
2 tablespoons white or red vinegar
2 tablespoons organic raw honey
2 tablespoons toasted sesame oil
2 cloves garlic
1 teaspoon smoked paprika
1/2 teaspoon cayenne pepper (optional)
1/2 teaspoon ground ginger
2 pounds boneless, skinless chicken breast
1 tablespoon coconut oil
2 tablespoons dry toasted sesame seeds
In blender, chop the shallots, add the vinegar, honey, sesame oil, garlic, paprika, cayenne, and
ginger and continue to blend together until smooth.
Pour the marinade over chicken (a ziplock bag works great). Marinate in refrigerator for at least
30 minutes and up to overnight.
Heat the coconut oil in large nonstick skillet set over medium heat.
Add the chicken and cook for 5 minutes on each side, or until browned.
Drizzle the remaining marinade over the chicken, stirring to coat chicken.
Cover the pan partially and reduce the heat to medium–low. Cook for 5-10 minutes, turn
the chicken, and cook for 5-10 more minutes (depending on how thick the breast are).
Sprinkle sesame seeds over. Remove from the heat.
For The Roasted String Beans With Cherry Tomatoes:
1 Bag of string beans
1 container of cherry tomatoes (washed) 1 medium onion chopped in 1 inch pieces
2 tablespoons of balsamic vinegar
1 teaspoons raw honey2 tablespoons olive oil
salt and pepper to taste
Pre-heat oven to 350
Place beans and onions in bowl and drizzle with olive oil, vinegar, honey add salt and pepper and mix.
Cover a baking sheet with aluminum foil and spread the beans and onions out evenly and bake
for 15 min then toss and bake again. Once the edges of the beans start to brown add the
cherry tomatoes and toss again. Cook for 5 more min, just until the tomatoes start to pop.
