Clean Cut Chilled Avocado & Cucumber Soup

Purely summer refreshing!  This super quick and easy summer go to cold soup can be made in 10 minutes and tastes delicious ocean or pool side!  Pair with a Clean Cut summer cocktail and enjoy!

Clean Cut Chilled Avocado Cucumber Soup 

  • 1 medium cucumber, peeled & seeded & cut in pieces + 1 cucumber diced to stir in at finish
  • 1 ripe avocado, peeled, seeded, quartered
  • 1 scallion, cut in pieces or chopped onion
  • 1 garlic cloves
  • 2 T. fresh parsley
  • 2 T. fresh lemon juice
  • ½ c. plain greek yogurt
  • 1 c. cold water-may add more to desired consistency
  • Salt & pepper to taste
  • Mint leaves

Puree all ingredients except 1 diced cucumber in blender till smooth. May add additional water at end to thin slightly. Stir in diced cucumber stirring after transferring to bowl.  Add some mint leaves for taste and garnish.

Adjust any seasonings to taste.

Clean Cut Fall Pumpkin Seed Kale Salad

Salad is not just for summer!  Add a twist of fall to your next green bowl and enjoy this season with some great health benefits.  Pumpkin seeds are pretty cool, and easy to add to any salad!
  • 1 oz of pumpkin seeds pack 7g of protein, 6g of omega-6’s, and are high in fiber
  • Packed with antioxidents
  • Decrease risk of breast and prostate cancers
  • High in magnesium
  • Lowers blood sugar
  • Can improve sleep

So grab some of these powerful seeds and enjoy this fall treat!

 

Clean Cut Fall Pumpkin Seed Kale Salad
Ingredients:
4 cups chopped kale massaged with olive oil

1/2 avocado, diced
Sliced radish
1 tablespoon pumpkin seeds
1 tablespoon crumbled goat cheese (optional)
1/2 lemon
Lemon Vinaigrette:
3 tablespoons olive oil
1/4 cup apple cider vinegar
Juice of 1 lime
2 tablespoons Dijon mustard
Whisk all the ingredients for the vinaigrette in a small bowl and set aside.
Using a large mixing bowl, add kale and 1 tbsp of olive oil and lemon on top. Massage kale with olive oil and lemon with your hands to soften. Let it sit for about 5 minutes. Then, top with diced avocado, radish, pumpkin seeds and goat cheese.  Pour vinaigrette on top and toss to combine! Serves 2

Pumpkin Chia Pudding                                          Ingredients
1 1⁄4 cup coconut or almond milk
1 cup pumpkin puree
1⁄2 cup chia seeds
1⁄4 cup or less maple syrup
2 teaspoons pumpkin spice
1⁄4 cup sliced almonds

Instructions
Mix milk, puree, chia seeds, maple syrup and spice. Cover and shake thoroughly.
Refrigerate for 3-4 hours. Mix in almonds and enjoy!
Makes 4 servings
