Sometimes all you need is a yummy slaw to create a well rounded clean meal!
This simple slaw is full of flavor and healthy fat, so you will feel satisfied and be the hit to the bbq completing everyone’s meal!
Pair it with our Chicken (or turkey) spinach, artichoke and feta burger for a fantastic summer meal!
Clean Cut Avocado Slaw
- 2 carrots , julienned (optional)
- 3 cups shredded cabbage (can just buy the Cole slaw mix)
- 2 bell peppers , julienned (optional)
- 1 fennel, julienned
- 2 spring onions, sliced
- 1 avocado
- 2 garlic cloves, minced
- 1 lime, juiced
- 4 tablespoons olive oil
- ½ teaspoon chili flakes
- ¼ teaspoon black pepper
- Pink Himalayan salt to taste
Put the avocado, olive oil, lime juice, garlic, chili flakes, black pepper and salt in a blender or food processor.
Blend together until smooth.
In a bowl, add the prepared veggies and dressing and toss to combine.
