A Valentine’s Day Treat You Won’t Feel Guilty Over


With Valentines Day approaching, chocolate hearts and candy are hard to miss.  We all love that sweet treat, but all those store bought processed goodies will do nothing but add to your waistline and give you a stomach ache.
This delish silk mousse brownie recipe is sure to satisfy those cravings with a little less guilt this Valentines Day!  So get your hands dirty in the kitchen and make your sweetie a treat to remember!

Full Clean Cut Disclosure 🙂  Yes, this recipe is made with clean foods your body knows how to process, however, it doesn’t mean you can eat the whole pan. Remember portions size and a well made sweet treat goes a long way!  You will LOVE these!  Enjoy!

Silk Mousse Brownies

3 oz unsweetened dark chocolate, melted
1 C neutral oil, like grape seed, or a non flavored coconut oil
2½ C coconut sugar
4 large organic eggs
2 tsp. pure vanilla extract
¾ tsp. pink sea salt
½ tsp. cornstarch
 C cacao powder
2 Tbsp. almond flour 

Chocolate Mousse:
¾ C organic butter softened, but not warm
1¼ cup coconut sugar
5 Tbsp. cacao powder
1½ Tsp. pure vanilla extract
½ Tsp. pink sea salt
3 large organic eggs 
3 drops fresh lemon juice

Preheat oven to 350
Grease a 9 x 9 baking dish  

In a mixing bowl, combine the melted chocolate, oil, and coconut sugar.
Mix to combine.

Slowly mix in the eggs. Whisk in the vanilla, salt, cornstarch, cacao and flour.

Pour mixture into greased pan and bake for 30-35 minutes.

Allow to cool completely before adding the chocolate mousse.

For Mousse:
Use an electric mixer, fitted with the whisk attachment.

Beat butter and coconut sugar on high speed until completely smooth and fluffy. (coconut sugar is really gritty, so give it time to dissolve in to the butter or you will have crunchy mousse)

Once the sugar is dissolved Add the cacao, vanilla and salt and mix until combined. Add 3 eggs, one at a time, beating 4-5 minutes with each egg.
Add lemon juice with the last egg and beat until totally smooth and fluffy.

Spread mousse on cooled brownies and freeze for 1 hour.

Remove from freezer, cut into squares.

Garnish with cream and chocolate shavings. Store covered in the fridge.
