Soak jumbo scallops in apple cider vinegar for 20 minutes
Drain and season to taste with some cayenne pepper, lime and salt
Next, chop up some Bok Choy and either crush a handful of almonds or use some almond slivers.
Sautee the bok choy and almonds with 2 tablespoon3 of coconut oil and 2 tablespoons of honey.
In a separate pan sautee scallops in a little coconut oil til cooked through.
Stir veggies and scallops together and enjoy!!
